Colorado Elkhorn is an Asiago style cheese made with our raw cows milk. Like a fine wine, it's flavors intensify in our aging caves with time. Generally it is aged for more than six months, but occasionally we allow some wheels to mature with time. Keep an eye out for our special seasonal Elkhorn, spiced up black peppercorns throughout.
Joe is a California dry Jack rubbed with locally roasted Coffee, Cayenne and Cocoa powder. Certain to make a statement with its dark colored rind on any cheese plate. Do not be shy, the rind is entirely edible.
Occasionally we like to play around with the rind, for the holiday season we picked tender blue spruce sprigs and macerate them with Orange zest. This decadent melange is coated on this style of cheese and brought out for the holiday season.
