Lexi
With a stature to match her gregarious personality, her story is as big as both. Lexi had a unique beginning, being raised by the Simpkins family, whose youngest son wanted a milk cow and was going to call her milky. The whole family came to meet a couple calves and ponder taking one home.
They arrived in their 3 row Lexus sport utility vehicle from an hour away in South Valley. They fell in love with Lexi and wanted to take her home. They decided to take her home that day. Folding down the third row of seats and laying a furniture blanket in the back, Lexi made her way south for her first summer. On the drive her name changed twice ending with Lexi after christening the vehicle twice on the way home.
Lexi recently was filmed for a reality TV show on Saddleback Ranch this summer. Her personality got a little bigger as they called her back for a second filming.
Originally from the front range of Colorado, Moving to Routt County in 2007 to manage his grass fed beef operation in Northwest Colorado. Having grown up on the edge of town, I have always had a desire to be connected with the land.
Graduating for the University of Colorado with a degree in Economics, briefly working in the hospitality industry. I wound up preforming a variety of tasks for an automotive dealership. Post 9-11 I sought to make a difference in the world through my work and started a grass fed beef operation with a couple from Wheatland Wyoming. Fell in love with the fact I could heal the land, the consumers I sold my product too, and help others get into agriculture in partnership with me.
I have been to many short courses to improve my culinary skills. I was concerned with making my living off of the death of another creature. With my love for food and a desire to stay in agriculture I went to cheese making school in the spring of 2007.
Events unfolded worthy of a book on the grass fed beef operation (Either you spend a day with me to hear stories or you read a future book). The "damnation plantation" was sold in 2010 and the land was purchased outside of Steamboat in October of 2010 to work towards cheese production. The cheese plant was complete in mid 2016 and small scale production of cheese began in 2017.
